Where can I buy Ms. Wong's?

I've never fried before. Is this hard?

Not even a little. Just add ice cold water to the mix, dip your food, and fry. That's the whole thing. New to it? Tempura 101 walks you through every step.

What can I fry with it?

If you can dream it, you can tempura it. Chicken, shrimp, veggies, mushrooms, even Oreos and cheesecake bites. The only things to skip are anything soaking wet (pat it dry first) and frozen-solid pieces. Hungry for ideas? Our Recipes page is full of them.

Can I air-fry or pan-fry instead of deep-frying?

Deep-frying is how you get that signature light, airy tempura crunch, so it's our top pick. You can pan-fry too, just make sure your pan is deep enough to hold at least 2 inches of hot oil. The one to skip is the air-fryer: tempura batter needs to hit hot oil to puff and set, and an air-fryer just can't give it that.

Can I season the batter or use the mix as a dredge?

Go for it. Stir your favorite seasonings right into the batter, or use the dry mix as a light dredge before you batter. Fry fearlessly, this is your kitchen.

Why is my batter falling off?

Wet food and crispy batter are not besties. Pat everything dry first, then dip and fry.

Can I save leftover batter for later?

Fresh batter fries best. Mix only what you'll use and get frying right away. Between batches, keep it cold in the fridge. More than 10 minutes on the counter? Time for a fresh batch.

How do I store the mix?

Keep the dry mix sealed in a cool, dry spot, your pantry is perfect. No need to refrigerate, just add ice cold water when you're ready to fry.

What's the shelf life?

Unopened and kept somewhere cool and dry, your mix keeps for about 6 months. Check the best-by date on the pouch to be sure.

Is it gluten free? What's in it?

Is it vegetarian or vegan friendly?

How much food does one bag fry?

One bag comes with two 4 oz pouches. Each pouch coats about 1/2 to 1 pound of food, so a full bag covers 1 to 2 pounds.

Where is Ms. Wong's made?

Made in the USA. Blended, packed, and shipped from right here in the States.

How do I know my food is fully cooked?

Fry a few pieces at a time so the oil stays hot, and cook until the batter is golden and crisp all the way through. For meats like chicken, make sure they reach a safe internal temperature (165°F for chicken). Tempura 101 has timing cues for everything else.
